Family Friendly Meals with Danielle Rivoli

Finding family-friendly meals that keep you on track with your goals while satisfying partners, children, parents, and friends can feel like an incredible task. You want to eat foods that will fuel you but it’s hard to do that when you feel like you need to make a different meal for each family member. We get it. The key is in finding quality healthy recipes that the whole household will love, and it is easier than you might think, thanks to people like Danielle.

Danielle Rivoli is a wife and mother of two girls (ages 2 and 4), a passionate fit-foodie and gym-bunny, a breastfeeding counselor, and Instagram powerhouse. She has participated in FOUR of my challenges and shown thousands of women what is possible with hard work and consistency. Danielle is no stranger to feeling limited in the kitchen but throughout her fitness journey, she has compiled a great list of her top 10 favorite family-friendly meals.

DANIELLE’S FAVORITE FAMILY-FRIENDLY RECIPES

  1. Skinnytaste One Skillet Chicken with Bacon and Green Beans

  4. Clean Monday Meals Chicken Pad Thai

    • 18 ounces chicken breast

    • 8 ounces flat brown rice noodles

    • 1 red bell pepper

    • 1 cup chopped mushrooms

    • 1 cup chopped green onions

    • shredded carrots

    • peanuts

    • 1/4 cup rice vinegar (or fish sauce)

    • 1/8 cup coconut aminos

    • 1/8 cup red chili pepper sauce

    • 2 tbsp honey

    • 1 lime, juiced

      • Boil brown rice noodles. Drain and set aside. Chop up veggies - bell pepper, shredded carrots, green onions, and juice the lime. Slice chicken breasts into small pieces. In a bowl, mix rice vinegar or fish sauce, coconut aminos, red chili pepper sauce, and lime juice. Spray a nonstick skillet with coconut oil, then add garlic paste. Toss in chicken pieces and cook. Last, add noodles, then fresh veggies and the sauce.

  5. Clean Monday Meals Garlic Chicken

    • 1 lb boneless, skinless chicken breast

    • 2 large eggs, beaten

    • 1 cup gluten free panko bread crumbs

    • salt and pepper

    • 1/3 cup honey

    • 4 cloves garlic, minced

    • 2 tbsp gluten free soy sauce

    • 1 tbsp sriracha

    • 1 tbsp cornstarch

      • Preheat oven to 400 degrees Fahrenheit. Lightly oil a 9x13” baking dish or coat with nonstick spray. Cut chicken into 1-inch chunks. Season chicken with salt and pepper to taste. Working in batches, dip chicken into eggs, then dredge in bread crumbs, pressing to coat. Add chicken to prepared baking dish. Place into oven and bake until golden brown and crisp, about 15-20 minutes. In a medium saucepan over medium high heat, combine honey, garlic, soy sauce and sriracha (if using). In a small bowl, combine cornstarch and 1/3 cup water. Stir mixture into the saucepan until thickened, about 1-2 minutes. Stir in chicken and gentle toss to combine. Serve over rice.
