BBQ Pork Southwest Bowl: A Free Recipe From My Meal Prep Method

The last challenge of 2019 is about to begin and I am seriously in shock. I can’t believe 2019 is almost over! But what better way to launch into the holiday season than feeling shredded, sculpted, and like your healthiest self?

One of my favorite things about the Fall Challenge is that it automatically includes The Meal Prep Method. BBQ Pork Southwest Bowl

  • 4 oz. shredded pork tenderloin

  • 1 Tbsp BBQ sauce

  • 2 Tbsp corn

  • ¼ c black beans

  • ⅓ c jasmine rice

  • .5 oz shredded cheese

  • 1 cup shredded lettuce

  • 1/4 avocado

  • fresh cilantro

  • pico de gallo

  • 2 Tbsp Trader Joe’s Green Dressing

Customization Options

  • Make this meal low carb by replacing the jasmine rice with rice cauliflower or additional lettuce.

Meal Prep Method (How to prepare your bowl)

  • Prepare the shredded pork and jasmine rice.

  • Rinse and drain the black beans.

  • Assemble with remaining ingredients when ready.
